Mulled Wine

Its not normal mulled wine, but then who's shocked by that? We take clarified figs, mulled Volcan tequila, Tempranillo wine, and add Gamma Octalactone.

For anyone interested, that last part, normally written as γ-octalactone, is the compound found in both coconut and fig leaves. It is in fact why figs (and their leaves) can taste like coconut,

We dont cook the wine, we like the idea of a fruity mulled wine, not a stewed one. So once its made, we hold the whole drink at 72ºC so its ready to pour and drink.

Beets & Pears

Another delicious drink from Mandy, focusing on beetroot as a base, and building layers of fruit from there. Clarified wine poached pears, beet vodka, and St George Pear Brandy add depth and a touch of distilled woodruff brings a warm spice to the affair.

Also damned pretty if I say so myself.

Kiwi Gimlet

Our outrageously good twist on a classic gimlet, made with fermented kiwi, kiwi vodka, Mercies gin, Discarded Grape Skin Vodka and magnolia leaf oil. 

Bright, floral and with an almost green apple freshness to it, it’s a firm favourite. 

Grab a bottle to take home, give to someone as a gift, whatever the reason, you can serve it at home just the same as we do in the bar.

Moro Margarita

Probably our guests favourite drink, and certainly up there for all of us. Made with salt preserved blood oranges that sit for a minimum of 3 months until they are soft.

Once they have preserved, we strain the fruit from the liquid that the salt draws out, blend the fruit to a puree and then distill this with Volcan Tequila.

With the crystal clear orange tequila, we then add fresh Volcan Tequila, sugar, citric acid and clarified blood orange salt. That saline is made by clarifying the liquid the salt pulls from the oranges, so brings some orange oils with it.

Grab a bottle to take home, give to someone as a gift, whatever the reason, you can serve it at home just the same as we do in the bar.
