Our very own Will Abraham is one of just 20 UK bartenders selected to take part in the 2026 House of Suntory DOJO programme - a six-month journey exploring Japanese bartending, craftsmanship, hospitality and culture.
Now it’s time to put those learnings into practice.
Inspired by Kaizen - the Japanese philosophy of continual improvement - Will has created three serves for his Kaizen Menu, each exploring a different element of Japanese craft and culture through Roku Gin, Hibiki Whisky and Toki Whisky.

The ~ A-ka Shun ~ is a savoury, spicy red snapper variation that highlights Scottish tomato’s at their seasonal peak. A tasty combination of Miso, tomato, spice and Roku gin that blends together with a Pilsner foam to create a decadent and sophisticated savoury serve.

Canvas ~ is a Hibiki ritual serve that celebrates Japanese craftsmanship through handmade coasters and essences of the distilleries that make up the blend. It celebrates and highlights elements of Shodō (japanese calligraphy) with a hydrochromatic reveal when an essence is applied to the coaster.
