Our very own house Milk Thistle vodka, crafted by the one and only upstairs at the distillery. Paired with this incredible locally made rose vermouth from for raspberry and floral notes and a dash of chocolate bitters to bring out its darker side.

Your Bristol Cocktail Weekend plans could use one more flight of stairs.

Make your way to the top of Milk Thistle and into the The Spirit of Bristol gin Distillery, where Pete Lumber has the gin covered.

There’ll be a Ginocello to start, followed by Bemmie Dry and Clifton Royale Gin with paired tonics, plus the story of how each one goes from botanicals to bottle, right here in Bristol.

Worth the climb, we reckon.

Meet the Montaña. Or, as calls it, the Bellini’s son-in-law.

Peach is out. Jammy fig is in, with pisco, grenadine and a splash of olive brine to pull it all together.

Topped with Prosecco and a black olive.

Sounds questionable, tastes incredible.

We’ve got the man himself, Emilio Di Salvo , back behind the bar, working on our new drinks menu 😍

It’s looking (and tasting) pretty incredible. As for what he’s been working on? We’ll be revealing more very soon.

Our Grapefruit Rosita takes a little inspiration from the Negroni - but it’s bitter, brighter and built for summer.
