The generation who spends the most on nights out - are the ones age 18-24.

They are the generation to capture, yet all I see is bar owners turning their nose up at them and ignoring their requests.

They need a new offer, if you don’t capture them, you’ll end up with a bar with an ageing population.

If I walked into your bar and only had 30 mins and 4 opportunities to help, this is what I’d do.

1. Watch how customers order - find the friction points, check the facial expressions and alleviate the kink.

2. Id add Custom Cocktails, for an easy win to boost the average ticket price and boost retention + margin in each drink.

3. Give the staff our upsell prompt sheet, making sure we role played EVERY day - sales is the core of hospitality.

4. Retrain the staff, give them a real incentive to sell a cocktail - owners know it’s higher margin in a cocktail, use it.

On my last post about staff upsells, people in the comments said it’s “too salesy” - if you see it like that it’s a limiting belief and ruining your bars revenue.

Customers deserve the best experience in your bar , they deserve to know about your best offers as one might be exactly what they’re looking for.

If no one ever tells them about the offer, they can’t buy it and have a better experience.

It’s so important for you and your team to get past this limiting belief and start serving the customers as they deserve.

If you have a nicer bottle of wine, offer it. If you have a better deal on shots, offer it. If your best cocktail would be a perfect match, offer it.

This is probably why your cocktails aren’t selling.

People are quick to jump and say ah they’re not a cocktail drinker, if you’re only selling cocktails to pure cocktail drinkers you’re losing money.

Let me explain.

The point is to be able to give people the best experience possible, to broaden their horizons, to allow them the depth of experience they deserve.

People who identify as “non cocktail” deserve an option to see what it’s like.

Writing off those people makes your job redundant. There’s no sales aspect there.

Usually, the problem isn’t even the cocktails - it’s the friction between where they are now; and getting what they actually want. Beers seem like the quickest vehicle, that doesn’t mean it’s the best.

The rules that govern the hospitality industry are changing - it’s not about who can give the most anymore, it’s who can give the best.

People don’t want volume anymore, they want value. It’s a different market, new customers means you need a new offer to suit them.

Bar owners seem to think that more options = more sales , when really it just creates more indecision.

Indecision reduces profit- FACT.

Why do you think every other purchasing experience has so many prompts for upsells and cross sells - customers need HELP to make a decision to help themselves.

Is your menu overwhelming customers ? If you find you own a cocktail bar but mostly sell beer and wine - it might well be.

I bet you know the top 10 selling cocktails off the top of your head, I bet you also know the ones that never sell.

Bars lose second round revenue because the first drink doesn’t land.

At the bar I used to work at the boss would describe the process of building the night for the customer - WITHOUT them realising.
