COTM: Beet Around the Bonnet

This months cocktail of the month is a margarita-rif.
Manager Ben has entered the Cointreau Margarita competition, challenging bartenders to design a margarita-inspired cocktail utilising Cointreau and a secret ingredient given to each participant at the application stage.
Ben's secret ingredient? BEETROOT!
With such an intriguing secret ingredient, Ben has had his work cut out to design this drink - however we have something truly spectacular for you.
Paying homage to our cheese & charcuterie roots, this cocktail utilises a fat-washed tequila, using our very own herb and rosary goats cheese as a base, that plays beautifully with the earthiness of beetroot.

Beetroot bug fermentation
Lime juice
Beetroot & scotch bonnet syrup
Saline
Dehydrated beetroot & sea salt rim
Scotch bonnet chain

As part of the competition, this drink must be available to try between the 15th and 22nd of June for an anonymous jury of judges to attend and judge the drink.
