Ragazzi, today we’re making tomato risotto… but with a little trick. 🍅🤌🏻

First, we blend the tomatoes and separate the fresh tomato water from the pulp.

Why? Because every part has a job.

The tomato water brings freshness and intensity, while the pulp brings all that beautiful, rich flavour to the risotto.
