☀️ SUMMER SEASONALS ☀️

This season, we're exploring the unexpected through two new cocktails.

🌿 VERVEINE is a collaboration with our neighbours at FUMO, the summer pop-up reimagining ice cream beyond dessert. Built with Bear Brothers Vodka, lemon verbena, fennel, Avallen Calvados, and FUMO's savoury gherkin ice cream, the cocktail plays with freshness, texture, and contrast in a truly unique way.

🍈 MELON celebrates the sweetness of peak-season cantaloupe, paired with everlasting flowers and Woodford Reserve Rye Whiskey. Bright, floral, and gently spiced, it's a fresh take on one of summer's most iconic fruits.

🌱 CARBONE 🌱

Carbon farming uses agricultural practices that capture carbon from the atmosphere and store it in healthy soils. By improving soil health and biodiversity, it helps create more resilient farms while reducing their environmental impact.

Inspired by this approach, CARBONE combines beetroot from Les Jardins de Karine, black garlic-infused Dolin Dry Vermouth, Origin Smoked Gin, and Dartigalongue Un-Oaked Armagnac. Earthy, savoury, and delicately smoky, it reveals the richness of the soil through a bold and complex expression.

🇹🇭 Paris met Bangkok.

Every Afternoon Session & Happy Sundays is an invitation to discover a new cocktail destination without leaving the Marais.

For this edition, we welcomed two of Bangkok's most exciting bars: at The Cambridge Public House and .us.bkk at Little Red Door.

Over the course of one Sunday, ideas were exchanged, stories were shared, and cocktails became a window into one of Asia's most vibrant bar scenes.

A huge thank you to everyone who joined us, to the teams from Dry Wave and Bar Us for bringing a piece of Bangkok to Paris, and to & for supporting this edition. 💙

Inside SOLAIRE: A Cocktail Inspired by Solar Agriculture ☀️

Solar agriculture combines food production with renewable energy. By integrating solar panels into farmland, crops are protected from extreme weather while clean energy is generated, creating a more resilient and efficient way of farming.

This approach inspired SOLAIRE, one of the cocktails from our AGRI/CULTURE menu. Built around black tea from in Roussillon, alongside green walnut & milk, triple sec, and fine cognac, it captures the warmth and balance of a farming system that works in harmony with its environment.

AGRI/CULTURE is our tribute to the farmers shaping a more resilient future. Each cocktail highlights a French producer and an ingredient cultivated through the very agricultural practice the drink celebrates. 🌱✨

Madina 🦩

After spending nine years travelling the world as a flight attendant, Madina decided it was time for a new adventure behind the bar. She joined Little Red Door in 2021, where she learned the craft alongside Alex and Barney. Following the birth of her son three years ago, she transitioned to the Lab full-time, where she now oversees production and helps bring every cocktail to life behind the scenes.

Whether it's ensuring every batch is made to perfection or keeping the Lab running smoothly, Madina's attention to detail and dedication are essential to everything we serve. While you'll rarely find her behind the bar today, her work is part of every guest's experience.

This season, we're celebrating two ingredients at their peak with a pair of cocktails that capture the flavours of the warmer months.

🍑 ABRICOT combines Bear Brothers Vodka, roasted apricot, sweet clover, and black rice for a rich, floral, and delicately toasted expression of the fruit.

🫑 POIVRON pairs Fords Gin with bell pepper and a blend of fresh herbs, revealing the bright, crisp, and vegetal character of one of summer's most underrated ingredients.

Two seasonal creations, each highlighting the beauty of fresh produce through simplicity, balance, and flavour.

🌱 RÉGÉNÉRATRICE 🌱

Inspired by regenerative agriculture, an approach that goes beyond sustainability by restoring soil health, increasing biodiversity, and strengthening ecosystems with every harvest.

Built around chicory from Chicorée du Nord, alongside chicory water, barley, Dolin Bitter, and a grenadine-style syrup made from Pépin red wine, RÉGÉNÉRATRICE is earthy, lightly roasted, and delicately bittersweet. A cocktail that reimagines familiar ingredients while celebrating agriculture's ability to give back more than it takes.

A thoughtful expression where regeneration starts from the ground up. 🌍
