So many of you asked how we make our yuzu prosecco foam after we posted the video! So here it is. :)
We start by reducing Prosecco to cook off the carbonation and concentrate all those flavors. Then we add yuzu peel, a little gelatin, and a touch of acidity to brighten it up. Strain, charge it in an iSi whipper, and you get a light, airy cloud of citrusy bubbly. DELICIOUS. 🤤
