Pisco, Aperol, Cointreau, Licor 43, Lime, Grapefruit, Pandan, Tonka
This cocktail is all about graduated depth of flavour.
The bright top notes come from a small amount of freshly squeezed lime and grapefruit juices mixed with El Gobernador Pisco. Pisco is a clear spirit, technically a brandy, from South America. It drinks similar to a gin or vodka, but has smooth, tropical floral undertones that tend to enhance fruit flavors in cocktails without adding sweetness.
The heart note is made from the combination of Aperol, Cointreau and Liquor 43, creating a rounded body with caramelized baking spice sweetness, balanced by bright, bitter orange rind.
The deep base notes are formed with a few dashes of two house made tinctues: Tonka Bean and Pandan.
Tonka Bean adds hints of marshmallow, clove, cherries and rich marzipan. Pandan, a plant from Southeast Asia, imparts flavours of grassy vanilla, and roasted almonds.
The result is bittersweet and punchy sipper that walks the line between boozy and crushable. It's a cocktail worth visiting again and again.
