We’re thrilled to welcome executive chef Michael McKnight of the Rossmount Inn Hotel Restaurant & Bar to Spruce for A Taste of Saint Andrews. Stop by as we celebrate our first year of Indulge Food & W**e!

Come say hello Chef Michael McKnight who will be representing The Rossmount Inn Hotel Restaurant & Bar at The Spruce NB located at 114 Water Street.

Chef Michael McKnight is the Executive Chef of the Rossmount Inn, one of New Brunswick’s celebrated culinary destinations. A native of Moncton, New Brunswick, Michael is a Red Seal–certified chef and graduate of the Culinary Institute of Canada whose cooking is deeply influenced by the ingredients, seasons and landscapes of Atlantic Canada.

Michael developed his craft at the Rossmount under the mentorship of Chef Chris Aerni, gaining an intimate understanding of the Inn’s long-standing philosophy of allowing exceptional local ingredients to guide the menu. Today, he carries that philosophy forward while bringing his own thoughtful and contemporary perspective to the kitchen.

Chef Michael represents the next chapter in the Rossmount Inn’s culinary story: respecting the traditions and relationships that have shaped the restaurant while continuing to evolve them for a new generation of guests.
