This was Gentse Feesten 2026 through the eyes of our crew! 🍾🎉👯‍♀️

For 10 days, we see each other almost every day and besides working our asses off, we laugh together, we cry, we eat, we drink (a lot of tequila obviously 🤪) and share stories of the night before 😇

For 10 days we’re like a big (somewhat disfunctional 🙄) family with the most amazing people, our crew ❤️❤️

Thanks to every single person of our crew, for washing dishes 8 to 9 hours non stop, for baking 3000 tacos, for shaking an endless amount of cocktails, for cleaning the sometimes very disgusting toilets (honestly how do certain people poo? 🤪), for serving the people with a smile while surpassing 15K steps every day.

Looking forward to next year ❤️

Did you know that tacos al pastor are actually the result of fusion cuisine? 🌮

Tacos al pastor combine Lebanese shawarma traditions with Mexican flavors and ingredients.

🫓 In the late 19th century, Lebanese immigrants brought the vertical spit-roasting technique to Puebla, Mexico. This led to the creation of tacos árabes: lamb cooked on a vertical spit and served in pan árabe, a pita-like flatbread.

🌮 Over time, the dish evolved. Lamb was replaced with pork, the meat was marinated with Mexican chilies and spices, and eventually paired with corn tortillas. The addition of pineapple became one of the dish’s signature elements.

Today, tacos al pastor are among Mexico’s most iconic and beloved tacos, enjoyed all over the world. How beautiful is it that one of the most famous Mexican dishes was born from the meeting of two culinary cultures? ❤️

That’s exactly what we strive to do at Mexcalli: celebrate authentic Mexican flavors while working with local ingredients and techniques. Because great food often happens where cultures meet ❤️
