This is your last week to be able to have a farewell drink with us.

Births and Deaths will be doing our final call on Saturday, we really hope that you can come in and create one last memory with us and our amazing staff.

4 - 10 tonight and 4 - 12 Fri and Saturday, we hope to see you one last time.

WE AREN'T DONE YET!

Come support Conor Teevan and his bee team project. We will be raising money to go towards opening his native bee sanctuary right in the CBD of Wollongong.

Join some of Wollongongs best up and coming comedians from Side Door Theatre as they throw down their best banter... Including the first ever performance by Conor the king bee himself! 😉

Discounted drinks will be supplied by Silk and Grit and The Farmers Wife Distillery mixed up by the B&D bar team.

It is with a heavy heart we have to announce that on the 30th of July, Births and Deaths will be officially calling last drinks and closing its doors.

When we first opened our doors in 2018. We had the mission to put forward an Australian gin focused, sustainable cocktail bar that, pun intended, raised the bar of Wollongong hospitality and we like to think that we achieved that. It’s been an incredibly emotional 2 and a half years for the hospitality industry, covid has pushed us all to the brink and at the end of it all we are going to have to say goodbye.

We want to thank everyone that has come through the doors to support our little cocktail bar, without the support of the local community, friends and family we wouldn’t have been able to operate. We have had so much fun serving you all, through the bar we have made some of our closest friends, you are all amazing and we will miss you.

To the brands and reps that have thrown their support behind us, we thank you and wish you all the best in the future. The Australian spirits industry is the strongest it’s ever been and is only getting better every day, so we encourage you to get out their and support Australian spirits so they can continue to produce world class products.

Most importantly we want to thank all of the staff, past and present, for their tireless effort, research and hours of dedication that went into making our dream come to life. Births & Deaths could not have become what it was without you, we will forever be family. Customer service was always our most important focus at B&D and to see week after week the great reviews come through that all talk about the service first is and absolute credit to you all.
A massive shout out to our bar manager and OG employee Tom Opie, you gave everything to your job and treated that bar like it was your own. You have grown so much over the last 3.5 years and have become one of the best cocktail creators I’ve ever met and we wish you all the best with your big plans in the future, we know you will kill it.
Finally there would be no Births & Deaths without Jared Huk at the helm. Your tireless efforts both in front and behind the scenes, drove the direction of the bar with your passion for all aspects of hospitality. As a mentor to young bartenders, you are always willing to chat booze, techniques, banter and share your knowledge. We cannot thank you enough for every bit of blood, sweat and tears you have given Births.

We’ve sipped, we’ve laughed, we’ve bantered and we are going to hold onto those memories for the rest of our lives. We ask that you all join us in raising a glass to our little venue one last time before we say Goodbye on the 30th. We look forward to having one last drink with you all.

B&D SODAS

Lots of people come to births and deaths for the first time and say they don’t like gin.. however it turns out that most people love gin, they just don’t like tonic water… that’s ok not everybody is perfect 😉

So here at B&D we have created our own list of rotating sodas that we can pair with our list of over 180 Australian gins. Many of the sodas feature native ingredients to compliment the Australian botanicals in our gin range. They are also an excellent non-alcoholic option!

By now you have probably all tried the delicious fruit from the Lilly Lilly (midjuburi) tree, however the leaves are also extremely fragrant.

They have the flavours of the fruit combined with a nutty finish that makes a lovely fresh soda. The soda is available all weekend paired with Kangaroo Island Spirits O-gin and grapefruit.

DAALGAAL

Daalgaal aka the Illawarra plum (podocarpus elatus) Is a juicy, pulpy fruit with a grape-like texture and sweetish, mild pine flavour. The tree is a common rainforest species endemic to the east coast of Australia.

The plum is made of two section, an inedible seed and a larger fruit connected to it. It is one of a few rare fruits that have an external seed, which makes them easy to eat but strange to look at!

They were a common treat for the indigenous Dharawal people as they foraged the local area. They brought great health benefits being very high in vitamin c and having 3 times the antioxidants of blueberries.
The plums also contain a high amount of pectin which makes them perfect for use in jams and conserves.

This increased pectin also brings a fantastic texture to the syrups that we use for our cocktails resulting in a beautiful mouthfeel that is unmistakably Daagaal (Illawarra plum).

This January 26th the team at births and deaths would like to acknowledge the Dharwal people, the traditional owners of the land on which we operate. We pay tribute to elders past, present and up coming for allowing us to forage their land for the ingredients that make our drinks special.
With using these ingredients comes a responsibility to educate our clientele on their history and the connection that they have to the indigenous people of the area.
Today is a day of reflection, a chance to educate and come together to understand the deep indigenous history of Australia.

With that in mind we will be closed this evening but will be back on Thursday 27th refreshed and ready to serve you.
