Highwayman is heading West!

For one night only, Highwayman founder and head distiller Dan Woolley is heading to Edward & Ida’s.

We’ll kick things off with a welcome cocktail before settling in for a three-course feast, paired with a selection of Dan’s favourite Highwayman drams.

As the first official Highwayman tasting event in WA, it’s a rare chance to hear the stories behind one of Australia’s most exciting whisky producers while enjoying great food, great company and some seriously good whisky.

For two nights only, our talented friends Cenna Juan Loa & Josh Pearce are taking over the Edward & Ida’s kitchen with a five-course Filipino feast downstairs in Ida’s Den.

Expect bold flavours, family recipes, modern technique and a menu inspired by the food, traditions and stories that shaped Cenna’s upbringing.
