The Warlock. A 1930s Margarita, gone rogue.

We built it on shared terpenes: Aquavit's caraway and anise locking into the heat of our house-made Verdita, Apple Eau De Vie holding the crisp orchard edge, and a whisper of elderflower to soften the lime.

Sharp. Green. Delicious.

We're open seven days a week now, with doors from 4pm, Sunday and Monday, joining the usual Tuesday to Saturday lineup.

Meet the Devil's Dance.

The Old Fashioned's been around since 1806; we just took it somewhere far more indulgent. Instead of an aged spirit, we fat-wash vodka with real ice cream; the ethanol strips the fat and dairy straight out of the cream, then a hard freeze pulls the solids back off. What's left is silky as hell, no added sugar, no cloudiness.

From there it's fried banana liqueur, caramelised and roasted, balanced out by dry cocoa bitters so it never turns saccharine. Finished with a brûléed banana garnish, because why stop at one hit of caramelisation.

What a showdown on Sunday for the 7 Deadly Sins Competition! 🏆

Huge congratulations to Riley Keane from taking top spot on the podium with his winning creation, ‘Breakfast of Champions’ (inspired by Gluttony), and walking away with the $750 cash prize.

Massive shoutout to our incredible runners-up: Connor Brodley from PJ's and Romi from Highball , who both snagged some legendary sponsor prize packs for their killer builds.

(Sadly, the cocktails were so good that zero photos were taken before they were completely drunk... 🫠)

The Warlock

Y'all saw Apple Eau De Vie, Aquavit, and Verdita together and asked how a fresh, spicy green juice profile sits alongside a 1930s Margarita framework. But we don't guess with our specs; we move with purpose.

The botanical bridge here is all about shared terpenes and precision balance. Aquavit’s caraway and anise notes lock right into the fresh, herbaceous heat of our house-made Verdita.

Instead of letting that spice overwhelm the glass, Apple Eau De Vie acts as the crisp, orchard-fruit anchor, while elderflower microdosing introduces delicate floral esters that round out the aggressive lime acidity.

Fresh herbaceousness. Crisp green juice drive. Sharp, intentional, and deeply balanced.

From this coming Monday, Devil You Don't is trading 7 days. That means no more waiting for mid-week to get a proper drink.

Mondays to Sundays. Doors open at 4pm.

We took the backbone of an 1890s classic and ran it through modern lipid and protein chemistry.

To rebuild the Clover Club, we crafted a house raspberry-aromatised wine and paired it with high-proof yuzu gin. To get that signature velvety mouthfeel without using raw egg whites, we subjected the entire batch to a lactic curd clarification using whole yogurt.

The acid-driven curdling process traps all bitter tannins and clouding agents, leaving behind a perfectly transparent liquid loaded with concentrated fruit esters and soluble whey. The result is a sharp, bright profile where the punchy citrus and raspberry notes pop on the palate without any heavy weight on the tongue.
