Meet Elle — our Master Mixologist & Front of House Leader.
For Elle, mixology has always been about more than the drink itself — it’s about creating memorable experiences for every guest who takes a seat at the bar.
Her style? Elevated yet approachable. Familiar flavors, refined presentation, and cocktails that feel both timeless and unexpected.
One of her favorites to create is a passion fruit–forward cocktail inspired by the 1940s Hilton classic, the Jungle Bird — bright, vibrant, and designed to bring a little tropical energy year-round.
She’s especially inspired by thoughtful hospitality, lower-ABV cocktails with depth and balance, and ingredients that let a drink truly shine — especially fresh citrus and amaro.
If Elle were to design a cocktail inspired by The Peregrine, it would be a modern take on an Old Fashioned: toasted barrel whiskey, notes of smoked oak, a hint of citrus, and an elegant finish.
But above all, what matters most to her is the guest experience. From celebrations to quiet nights out, she loves knowing the bar becomes part of someone’s memory.
Her advice for aspiring mixologists?�Master the classics, understand balance, and never forget that hospitality comes first.
