New recipe. A fig will not give you juice, a press hands back about half, so the extraction is done with an enzyme instead. Blend 1,000 g of Black Mission figs with 200 g of water into a mash, about 1,200 g, then 4 g of tartaric acid to bring it to pH 4.5 and 6 g of Toufood Pectinase at 0.5% of the mash. Hold the mash sealed at 45C for 3 hours, chinois then coffee filter, then 80C for 2 minutes to stop the enzyme. That gives about 850 g of clear fig liquid, roughly double a press. Finish the cordial cold with 125 g sugar, 6 g tartaric acid and 2 g salt, which lands at 900 ml, 260 g/L sugar, 10 g/L acid, 20 serves. The sherry is three, not one: fino for the saline lift, amontillado for the nut in the middle, oloroso for the weight underneath. Per serve: 25 ml fino, 20 ml amontillado, 15 ml oloroso, 45 ml clear fig cordial, 1 ml Peychaud's bitters, wine glass, crushed ice, swizzle, half a fresh fig on the rim. 145 ml in the glass at 7% ABV. The rail bottle per litre is 410 ml fino, 330 ml amontillado, 245 ml oloroso and 15 ml Peychaud's, 60 ml a serve, 16 serves a litre, and the cordial goes in at the pour. New recipe, and it goes on draft. Red bell peppers ferment for a week in a vacuum bag at 2.5% salt, 20 to 22°C, double bagged, released and resealed on day 2 and day 4. The juice goes into a 1:1 cordial with 80 g of tartaric per 1,000 g of strained juice, dissolved over low heat. Per serve: 20 ml mezcal, 40 ml Aperol, 20 ml pepper cordial, 140 ml water, carbonated to 3.5 volumes. The keg mix per litre is 90 ml mezcal, 180 ml Aperol, 90 ml cordial, 640 ml water, and a 19 L keg pours 86 serves off one ferment and 4.4 pounds of peppers. Wine glass, ice, pitted olive on a pick. New recipe. A grasshopper rebuilt as a bottled sparkling drink. Hops and green tea together carry the herbaceousness of the mint, lactic acid carries the creaminess, champagne acid and 3.5 volumes of carbonation do the champagne part, the white cacao stays where it was. Lemondrop pellets go into gin at 40C for 4 hours, 8 g per 750 ml. Sencha cold brews overnight, 10 g per litre of water. Per serve: 30 ml hop gin, 10 ml white creme de cacao, 120 ml sencha, 8.5 g sugar, 0.6 g lactic, 0.25 g tartaric, 0.17 g salt. Carbonated to 3.5 volumes, headspace purged, crown capped, months in the fridge. Nothing to shake, ten seconds to serve. About $2.00 a serve, 11.6% pour cost at $17. Build is 45 gin, 20 lemon, 15 oleo, 45 soda over cubed ice, yogurt foam from the siphon on top, no garnish. About $1.75 a serve, 12% pour cost at $15. Unripe tomatoes from the late-July market, juiced, clarified, and acid-adjusted into a gimlet cordial: 500 g sugar, 30 g citric, 12 g malic per 1,000 g clear juice, two weeks in the fridge. The shiso is a rotovap distillate: blanch 50 g of leaves, blend with the gin, run it through at 40C and 60 mbar, out at 38 to 40%. Stirred, served up, one leaf on the rim. Labor is per build, so a mini made to order costs full-drink labor for half the contribution. New recipe on the site. A reverse martini for melon season: agar-clarified honeydew, acid-adjusted with tartaric and malic, stirred into fino sherry at 15% ABV.
