Like many of ya'll, I've started drinking a lot of mezcal. It has become a favorite of mine to make cocktails with. Mezcal's complexity allows a lot of creativity in the cocktail process. Pineapple being a natural partner with the sweet smokiness of the spirit, I started there and then let color drive the rest of the process!
Wahaka Reposado, Yellow Chartreuse, Pineapple Juice, Vin Juane, Aquafaba Fever Tree Indian Tonic
