New year, new chapter • After two years, four menus, and countless memories, we have made the difficult decision to retire our evening cocktail program at King Pigeon and focus on our daytime operation starting January 1, 2026.
The cocktail program at King Pigeon was a decade-long dream of mine that started with my first true cocktail, a drink called the Para Todos Bien, from the restaurant Merchant near my alma mater, UW Madison. I remember recreating the drink – reposado tequila, lemon, maple, bird’s eye chili tincture (which I made in a mason jar in my sophomore year apartment), and a peated scotch rinse – for my family at Thanksgiving. Their enthusiastic response sent me down a cocktail rabbit hole that I’ve been tunneling through ever since.
Creating this program and watching our bar team bring it to life with such heart, creativity, and intention has been one of the most meaningful chapters in my career. The cocktails we created together weren’t just drinks – they were stories, experiments, and celebrations of the craft. I’m endlessly proud of what we built and deeply grateful to everyone who joined us for a drink.
Over the past two years, however, as we’ve gotten to know the community that has grown around King Pigeon, we’ve come to realize that the café is where we are able to provide the most value to our guests. By concentrating our focus and energy there, we hope to build on what we’ve already created and contribute even more meaningfully to the neighborhood and city.
To our extraordinary bar team: thank you for pouring your talent, curiosity, and soul into every menu and every service we’ve had. You brought this dream to life in ways I never could have imagined. And to our guests who supported the cocktail program from day one: your support and enthusiasm made this chapter unforgettable, and we are forever grateful.
We’re so proud of what this program became – and are equally committed to moving forward with clarity, purpose, and optimism. Thank you for being a part of this journey, and we can’t wait to continue welcoming and serving you during the day.
