Cutting Tiles is our ongoing DIPA series where we explore single hop varietals, brewed with raw wildflower honey from Merrimack Valley Apiaries.

Today’s release highlights Australian-grown Galaxy, layered throughout the kettle, whirlpool, and finished with a heavy dry hop. The wildflower honey keeps things light and easy drinking, adding a subtle floral, earthy note underneath it all.

Expect big hits of pineapple and mango up front, followed by bright citrus that carries through the finish. Soft, pillowy mouthfeel with just a touch of bitterness to round it out.

Closing out Anniversary Week with two new additions to the Wake Robin portfolio: Stout Finished Bourbon and Tawny Port Finished Bourbon. Both are part of our ongoing exploration of small batch blending and cask finishing, pairing carefully selected bourbons with distinctive barrels from around the world.

Wake Robin Stout Finished Bourbon
A first for us, this release features bourbon aged in former Trillium stout casks. It begins with a blend of three straight bourbons, averaging 6.4 years, before finishing in freshly emptied stout barrels to develop added depth and complexity.

Aromas of vanilla, caramel, and molasses open into cacao nibs, raisin, and hints of cinnamon and honey. The palate is rich and rounded, with roasted almond, dark chocolate, and soft vanilla layered with a touch of ripe cherry. It concludes with a smooth, lingering finish of toasted nuttiness and gentle oak.

Wake Robin Tawny Port Finished Bourbon
Continuing our exploration of cask finishing, this expression blends three straight bourbons aged 4 to 7 years, then rests for six months in Tawny Port casks from Portugal’s Douro Valley.

Notes of dried fruit and toffee are complemented by caramel, roasted nuts, baking spice, and a touch of leather on the nose. The palate unfolds with cherry and brown sugar, followed by cinnamon, clove, and bittersweet chocolate. A warm, lasting finish of spice, caramelized sugar, and light tannin brings it all together.

Day 2 of Anniversary releases is here and this lineup does not disappoint.

The Streets – Our annual Anniversary release and the capstone of the Street Series. This Triple IPA blends Citra, Mosaic, Nelson Sauvin, Simcoe, El Dorado, Amarillo, and Galaxy for a huge aromatic burst of candied peach, tropical fruit, lime zest, pineapple, and melon rind. The palate follows with ripe apricot, orange peel, and hints of white wine.

DDH Congress St – A classic and the perfect beer for the occasion. This amped up take on our flagship IPA features Galaxy for an extra punch of bright tropical character.

Twice Daily Serving: Raspberry – A long awaited return of a fan favorite. Brewed with an outlandish amount of raspberries, it pours a stunning deep ruby red with vibrant aromas of homemade jam, juicy raspberry, and mixed berry fruit leather.

Rabbit The Club – The first Double IPA in our Dashboard Series. Inspired by the zippy charm of a classic compact car and the iconic 90s steering wheel lock, this Citra and Mosaic driven DIPA bursts with blueberry, candied peach, and citrus zest. A touch of bitterness and a clean grainy malt backbone keep the ride smooth.

Forastera translates to “stranger,” a nod to our role as a new presence in the world of agave spirits. The coyote on the label symbolizes curiosity and resilience, perfectly capturing the spirit of this release.

Crafted from mature 100% Blue Weber agave produced in Jalisco, Mexico and blended on site at our Canton distillery, Forastera balances tradition with a modern touch. We honor time tested, artisanal methods that showcase true and expressive agave, while thoughtful blending highlights floral breadth and nuance. The result is a versatile spirit equally suited for slow sipping or building into your favorite cocktail.
