Closing out Anniversary Week with two new additions to the Wake Robin portfolio: Stout Finished Bourbon and Tawny Port Finished Bourbon. Both are part of our ongoing exploration of small batch blending and cask finishing, pairing carefully selected bourbons with distinctive barrels from around the world.
Wake Robin Stout Finished Bourbon
A first for us, this release features bourbon aged in former Trillium stout casks. It begins with a blend of three straight bourbons, averaging 6.4 years, before finishing in freshly emptied stout barrels to develop added depth and complexity.
Aromas of vanilla, caramel, and molasses open into cacao nibs, raisin, and hints of cinnamon and honey. The palate is rich and rounded, with roasted almond, dark chocolate, and soft vanilla layered with a touch of ripe cherry. It concludes with a smooth, lingering finish of toasted nuttiness and gentle oak.
Wake Robin Tawny Port Finished Bourbon
Continuing our exploration of cask finishing, this expression blends three straight bourbons aged 4 to 7 years, then rests for six months in Tawny Port casks from Portugal’s Douro Valley.
Notes of dried fruit and toffee are complemented by caramel, roasted nuts, baking spice, and a touch of leather on the nose. The palate unfolds with cherry and brown sugar, followed by cinnamon, clove, and bittersweet chocolate. A warm, lasting finish of spice, caramelized sugar, and light tannin brings it all together.
