Seasonality doesn’t stop upstairs.

The cocktails downstairs follow the same rhythm. Throughout the year, fruits, flowers and vegetables are preserved at their peak. Fermented, pickled, steeped in syrup or vinegar.

The ingredients you see here are part of that process. A way of capturing a season and bringing those flavours back when the time feels right.

Just like the kitchen, the menu downstairs is always changing. Guided by the seasons and shaped by what’s worth keeping.

An Albariño from Rías Baixas in Galicia, right on the Atlantic coast. A region shaped by the ocean, and in this case, quite literally.

This bottle spent around six months underwater. More of an experiment than anything else, but an interesting one!

Not everything has to be too serious. Sometimes it’s just about having something fun in the cellar.

Something we’re pouring at CUE.

A few bottles from Domaine de la Côte have made their way onto the list.

Pinot Noir from California, but not in the way you might expect. A bit lighter, more lifted. More about energy than weight.

These are the kind of bottles our sommelier Mo gets excited about. Wines that feel precise, a little wild, always moving.

There’s a certain clarity to them as well. That comes from Rajat Parr, who started as a sommelier and carried that way of thinking into making wine.

Sourced through Smaragd Wijnen, who’ve been bringing in some really beautiful bottles like this.

A big thank you to everyone who joined us this past Monday for the Collab/Workshop!

It was a day built around sharing ideas, technique, and a deeper look into flavour, from the workshop with the Warehaus team to the evening session downstairs. Always special to host people who care about the craft as much as we do.

Beyond the drinks and discussions, it was also the start of a new friendship. We loved getting to know the Warehaus crew and we’re genuinely excited to keep that connection going.

Huge thanks as well to our partners and for supporting the event, and to everyone who showed up curious, open, and ready to learn with us.

These are the moments that remind us why we love this industry.

We are really proud to share that CUE has been awarded 15 points by Gault&Millau.

As a newcomer, being recognised for what we do means a lot to the whole team. From cooking over open fire and working with time, technique, and flavour, to the way the restaurant and listening bar come together as one evening. It is exactly what we hoped people would feel when they walk through our doors.

At the same time, we see this as encouragement to keep going, keep learning, and keep refining what we do. Always curious, always grounded, and always focused on giving you the best possible night at our table.

Thank you to everyone who supports us, visits us, and believes in what we are building. We will keep doing the work, with our feet on the ground and our hearts forward!

Still figuring out Valentine’s Day plans? Downstairs at CUE is a pretty good place to land.

The food reflects the kitchen upstairs, just a little looser. Small plates, seasonal and kissed by the flames of the Japanese grill. Salty, smoky, sometimes pickled. Easy to eat by hand while your cocktail sits close by.

You snack, you sip, you listen. The selectors set the mood and the night finds its own pace.

Nothing rushed. Nothing loud. Just a good place to settle in.
