The Part You Don’t See: The emotional side of running a catering business

What challenges Lorenzo the most?

- Making sure everything is under control so that guests are happy and the team can perform at their best.

Working long hours with a thousand thoughts running through your mind, yet still looking sharp and ready to host.

Always finding the time and patience to support every team member while also being present for your guests.

Being proud of yourself for the results you achieve. Perfection isn’t always possible, and that’s okay. Mistakes happen, and they’re opportunities to learn and improve.

Finding the right way to handle situations when you haven’t fully met a guest’s expectations, and accepting that you simply can’t please everyone ❌ no matter how hard you try. What matters is giving your very best. 🙌🏼

Nobody is perfect, because perfection doesn’t really exist. Maybe it exists only in nature 🍀 and that’s why we should keep learning from it.

Life doesn’t always go as planned, often, it’s about responding to challenges as they come. That’s exactly what happened during one of our recent events, when we faced unexpected hurdles while trying to maintain our usual standards. ⏲️

We like to think of our guests as friends, and their satisfaction is always our top priority. Just as our pasta course was being served, they felt inspired to connect and decided to give a speech, a longer one than anticipated. Meanwhile, the pasta was cooling, and the chefs knew that by the time the speech ended, it wouldn’t be at its best anymore. 🫠

So we reacted quickly. We took the plates back into the kitchen and reorganized everything, without wasting anything, of course 💚 to ensure the quality stayed exactly where it needed to be.

A small yet delicious serving that made it onto our restaurant’s menu back in March ’24, when we discovered how incredibly spicy the core of this plant’s stalk tastes. 🌱

Does food connect people? If so, why?

Food is a universal language. Beyond religion and politics, it’s a way of communicating where no one should fear expressing what they truly want to share.

Yet today, it’s important to take a thoughtful stance on food. If we care about ourselves, we must also care about what we eat. Healthy people = a wealthy planet. In a fairer food system, there’s more happiness for everyone.

When it comes to connection, we all look for our moment to shine — to show what we’re good at, share our interests, and hopefully inspire the person next to us. But some people are better at doing rather than talking — and that’s when the magic happens: before dinner, somebody needs to prepare the food.

Cooking together reminds us that every great achievement starts with collaboration — and that strengthening team spirit can be done with a bit of fun!

Winter is coming, better get ready! 🥦🌱🥒🥑

Why do so many winter vegetables have a green color? Chlorophyll!

Winter vegetables are naturally designed to provide the nutrients we need to boost our immune system during the cold season: plenty of vitamin C, along with essential minerals and antioxidants.

Think about a salad, boring, right? Or maybe not. With a few simple tricks, a salad can become powerful: a boosted salad to boost our body :) 💪🏼

It’s all about combining cooked, raw, and marinated vegetables, adding crunchy textures for garnish, and finishing with a touch of acidic or spicy dressing — maybe even some balsamic/peppery flowers.

You might notice some h**p leaves in the picture. Don’t panic, it’s all organic. 💚 H**p is one of the most powerful and resourceful plants on this planet. Its leaves and seeds are often forgotten (or even prohibited), perhaps because they’re too special to be fully understood. But maybe… it’s worth taking a deeper look at their history and uses.
